ButcherBox | Pressure Cooker Carnitas

Y’all - I made the best carnitas EVER. Seriously, it’s the best-tasting thing I’ve made in a while and it was so easy to make! I used a five-pound bone-in pork butt that we got in our most recent ButcherBox delivery and it took less than two hours for the entire process using our Ninja Foodi pressure cooker setting.

I found the recipe for this on The Creative Bite website and I only changed up a few things! Since my pork butt was quite large, I pressure cooked it for 80 minutes and then sliced it into larger portions to pressure cook it again for another ten minutes. After shredding it all up, I used a ladle full of the juices from the pressure cooker to fry the carnitas until they were nice and crispy. Instead of tortillas, I used butter-lettuce to keep it as low-carb as I could and added some diced onion, cilantro, sour cream, and lime juice! FREAKING DELICIOUS, I tell you.
