Keto Banana-less Nut Bread

Why, oh why, do bananas have to be such a Keto no-no?! Having to eliminate the delight that comes from freshly baked banana bread has been a major test of my will power when it comes to sticking to this diet. That is why I was overcome with excitement when I realized that such a thing as Banana Extract exists! I searched for a Keto-friendly recipe and found a fantastic one by TheDietChefs.com!

This honest-to-goodness smells and tastes like the real thing! It is moist, delicious, and everything I had hoped it would be. It was incredibly difficult NOT eating it before I could snap a few photos. After I was finished, Mr. San Diego and I ate half of it in one sitting while sitting on the back patio, drinking our morning coffee! What a perfect way to start this Sunday morning!

This was so simple to make and didn’t take much time at all. My version doesn’t have the calorie-free maple syrup that the recipe calls for but it came out amazing without it! I was SO HAPPY with how this turned out and I definitely plan to have it on a regular Sunday rotation. It will be great to make for mornings when I have company too!
